Treat Yourself to Brunch

Going out to brunch can be extremely difficult while you are trying to lose weight. It can be frustrating that most of the foods contain simple carbohydrates and lots of sugary fruits and syrups. However, just because you are eating healthy that does not mean you can’t treat yourself to brunch. Call the ladies over and have brunch at home this weekend.

This healthy Chipotle Sweet Potato Eggs Benedict is a great meal to start your weekend. It is sure to keep you full for a while without spiking your blood sugar and insulin levels.

For Chipotle Sweet Potatoes:

  • 1 large sweet potato
  • 2 tbs extra virgin olive oil
  • 1 tsp sea salt
  • ½ tsp chipotle powder
  • ½ tsp garlic powder

For Hollandaise Sauce:

  • 3 egg yolks
  • 2 tsp lemon juice
  • ¼ tsp sea salt
  • 8 tbsp butter (organic)

For serving:

  • 8 poached eggs
  • 8 slices grass fed bacon
  • 2 cups spinach



  1. Preheat oven to 425 degrees Fahrenheit and line a baking sheet with parchment paper.
  2. Boil a pot of water. Slice sweet potatoes into thick rounds and boil for 15 minutes. Drain water completely.
  3. Mix sea salt, chipotle, and garlic powder into spice blend. Place sweet potatoes on lined baking sheet and use the back of a spoon to gently smash them. Drizzle both sides with olive oil and spice blend.
  4. Roast potatoes in oven for 15 minutes.
  5. For hollandaise sauce, blend egg yolks, lemon juice, and salt together until smooth. Then slowly add in the melted butter while blending until sauce begins to thicken.
  6. Poach eggs, and cook bacon in a pan. Sautee the spinach in the leftover bacon grease.
  7. Plate a smashed potato topped with spinach bacon a poached egg and a generous spoon of Hollandaise sauce.
